Ingredients
- 2 Eggs
- 1/2 cup Shredded Chicken
- 1 cup Mixed Bell Peppers, sliced
- 1/2 Medium sized Onions, sliced
- 1 cup Spinach, chopped
- 1/2 tsp Black Pepper
- 1/4 tsp Curry Powder
- A dash of Thyme
- 1 tbsp of Olive oil
- Salt to taste

Directions
- Add salt to the eggs, beat the eggs and set aside
- Place the frying pan on medium heat
- Pour in oil, followed by onions and shredded chicken
- Add chopped spinach and stir while ensuring it is not dry
- If it is dry add a little more oil or a tablespoon of water and stir
- Next, add the bell peppers and stir some more. Be careful not to overcook the vegetables
- Sprinkle curry powder, thyme and black pepper
- Sprinkle little salt over it, stir again
- Pour in the eggs covering all the chicken and vegetables
- Allow to set then turn to the other side
- Remove from heat when both sides are cooked
- Serve
