Ingredients
- 1 whole Mackerel
- 1 medium Onion bulb, sliced
- 1 Scotch Bonnet Pepper, sliced
- 2 garlic cloves, sliced
- 1/2 tbsp of ginger, sliced
- Salt to taste
- 1 Seasoning Cube
- 1/4 cup of Fish stock
- Kale as desired, chopped

Directions
- Blend the onions and 1/2 of the pepper
- Add 1/2 of the seasoning cube
- Spread the mixture over the Mackerel and leave to marinate for about 2 hours
- Preheat the oven
- Place on foil paper on a baking tray and put in the oven (medium heat, 175oC}
- Bake for about 30 minutes
- Place a pot on heat
- Chop the remaining pepper, ginger and garlic
- Add the 1/4 cup of fish stock. When it boils, add the kale, the remaining seasoning cube and pepper.
- Stir for about a minute
- Taste for salt
- Turn off the heat and serve
