Ingredients
- 2 1/2 cups Flour
- 2 1/2 cups Sugar
- 5 eggs
- 1 1/4 cups Vegetable Oil
- 3 cups grated Carrots
- 1 cup Desiccated Coconut
- 1/2 tsp Cinnamon
- 1 tsp Nutmeg
- 1 tsp Baking Soda
- 1 tsp Baking Powder

Directions
- Sift flour and other dry ingredients
- Mix oil and sugar in a bowl
- Beat the eggs and pour into mixing bowl
- Fold in the dry ingredients
- Fold in the grated carrots and coconut
- Add flavour as desired
- Pour into a prepared pan and bake
