Ingredients
- 400g corned beef
- 1 cup tomatoes, chopped
- 1tsp curry
- 1/2tsp thyme
- 1 seasoning cube
- Chilli pepper to taste
- Salt to taste
- 1 Onion bulb, chopped
- Carrots, peas, green pepper, etc
- 1/2 cup vegetable oil
- 2 eggs (optional)

Directions
- Put a pan on heat and pour in the oil
- Throw in the onions and fry for about a minute
- Add the chopped tomatoes and corned beef
- Allow to cook for about 5minutes
- Add the curry, thyme, pepper, seasoning cube and vegetables
- Beat in the eggs and allow to set for a minute
- Add a cup of water if necessary
- Add salt to taste and serve
