Ingredients
- 2 fingers of ripe Plantain (Fried)
- 500g Gizzard, chopped, seasoned and cooked
- 200g Carrots
- 100g Green Pepper
- 200g Fresh Tomatoes, chopped
- 1 Onion bulb, cut into rings
- 3 Chili Pepper, finely chopped
- 1 Seasoning cube
- 1/2 cup of Vegetable Oil
- 1/4 tsp of Thyme
- 1/2 tsp of Curry
- 1/2 tsp of Fresh Ginger, finely chopped
- A dash of salt to taste
- 2 leaves of Lettuce, for garnishing

Directions
- Set the Fried Plantain in a plate
- Add the oil into a pan and place on heat
- Put the cooked gizzard into the hot oil and stir for about one minute
- Add the tomatoes and let it cook for 5 minutes
- Add the onions,carrots, green pepper, ginger and chili pepper
- Season with the seasoning cube, curry and thyme
- Add salt to taste
- Serve with the fried plantain, garnishing with lettuce and tomatoes
