Ingredients
- 2 Eggs, lightly beaten
- 1 small size Onions, sliced or chopped
- 1 cup mixed Bell peppers, sliced or chopped
- Handful of Kale (optional)
- Handful of Spinach (optional)
- 1/4tsp of seasoning (Knorr or Maggi)
- A dash of Black pepper, Curry and Thyme
- Salt to taste
- 2 tbsp of Coconut or Olive oil

Directions
- Place a pan on medium heat
- Add the oil to the pan
- Add salt to the eggs and set aside
- Put the onions into the pan and stir for some seconds
- Add the curry, thyme and black pepper
- Stir and then add the bell peppers
- If you are using the spinach or kale, this is when to add it
- Sprinkle the seasoning on the vegetables and stir for about 10 seconds
- Give the pan a shake to spread the vegetables around the pan
- Try not to overcook, you want the vegetables looking fresh and colourful
- Pour in the eggs evenly and let it spread and cook slowly
- With the frying spoon or spatula, check if the bottom has set and is cooked
- Turn the egg over so the other side can cook
- Turn off the heat and slide the omelette into a plate
