Ingredients
- 6 pieces of Fried or Grilled Chicken
- 1 Fresh Scotch Bonnet Pepper, chopped
- 5 large size Fresh Tomatoes, chopped
- 1/2 Red Bell Pepper, chopped
- 1/2 cup Groundnut oil
- 1 medium size Onions, chopped
- 1/2 tsp Thyme
- 1 tsp Curry powder
- 1 Seasoning Cube
- Salt to taste
Salad
- 4 Lettuce leaves
- 2 hard red Tomatoes, sliced
- 8 slices of Cucumber
- 8 Olives
- 2 Cabbage leaves, sliced

Directions
- Place a pan on heat
- Put the oil into the pan
- Add onions to the oil and stir
- Add the tomatoes, red bell pepper and scotch bonnet pepper
- Let it cook on medium heat and you stir
- Ensure it does not burn
- Add the thyme, curry powder and seasoning cube
- Let it cook for about 5-10 minutes, if it is drying up, add tablespoons of water until the tomato is cooked and not sour
- Add salt to taste
- Turn the fried or grilled meat into the sauce and mix together
- Remove from heat and set aside
- Arrange the vegetables for the salad on a plate, put the peppered chicken by the side
