Ingredients
- 300g Sweet or Irish potato, diced
- 450g Sausage, sliced
- 400g Bacon, shredded
- 1/2 cup Sweet corn
- 1 cup Carrots, chopped
- 1/2 cup Snake beans, chopped
- 1/4 cup Green peas
- 1 Red Pepper, sliced
- 2 Spring onions, finely chopped
- 1 medium size Onions, chopped
- 1/4 tsp Curry
- A dash of Garam Masala
- 1/2 cup vegetable oil
- 2 eggs

Directions
- Peel the potatoes
- Put in a pot and put just enough water to cover the potatoes
- Boil the potatoes with 1tsp of salt for 10minutes
- Dice them into large cubes
- Also cut the sausages into large rings
- Put on the oven to medium heat
- Steam your chopped vegetables in little water for about 3mins
- Fry the onions and spring onions in the vegetable oil with the curry and garam masala
- Pour the boiled potatoes into baking pan, add the sausage rings and bacon and bake for about 10minutes
- Pour in the steamed vegetables and add the raw eggs over it
- Bake for another 10minutes
- Ready to serve
